Crémant de Bourgogne is a sparkling wine that meets the same special requirements of the Champenoise method. These practices, such as hand-picking, separate cuvees, second pressings, and final pressed juice, are now more explicit and enforeced more consistently. The galleries in the Bailly quarries were dug below 50 metres of rock beginning in the 12th century and now have an area of over 10 acres. This lovely Crémant de Bourgogne Chardonnay is aged on the lees for over 2 years, giving a characteristic yeasty-toasty nose reminiscent of Champagne. It is important to age the Chardonnay to give it smoothness. This has a lovely varietal character, smooth and creamy on the palate, with a deliciously long, lemony finish. Excellent Apéritif!
